The operator of a food establishment shall ensure that (1) cleaning required by 18 AAC 31.540 - 18 AAC 31.545 is conducted when the least amount of food is exposed, except for emergency cleaning of floors; (2) cleaning is performed by a dustless method; and (3) wastewater from cleaning required by 18 AAC 31.540 - 18 AAC 31.545 is not disposed of in a preparation sink, a handwash sink, or a sink used to wash food-contact surfaces.
