Section 18.31.228. Food protection: disposition of unsafe, adulterated, contaminated food.

The operator of a food establishment shall discard or recondition unsafe, adulterated, or contaminated food as follows: (1) food that is unsafe, adulterated, or not honestly presented, as specified at 18 AAC 31.200, must be discarded or may be reconditioned according to the establishment's procedure; (2) food that is not from an approved source, as specified in 18 AAC 31.200, must be discarded; (3) ready-to-eat food that may have been contaminated by an employee who has been restricted or excluded, as specified in 18 AAC 31.300, must be discarded; (4) food that is contaminated by an employee, consumer, or other individual through contact with hands, bodily discharges, or other means must be discarded.
